In Search of Golden Pudding

I haven’t previously cooked a lot with chia seeds.  Sure, I put them in muesli, and bread, but I haven’t really got into making breakfasts and desserts using their amazing mucilaginous qualities (great word that!)

Enter these crackers.  I was after something yummy with a bit of crunch that would meet the requirements of school, scouts etc regarding allergies…and boy do these fit the bill!

Firstly they are vegan, egg-free and dairy-free, and could easily be gluten-free too if you substitute gluten-free flour for the small amount of wholemeal flour in them.  More importantly, they’re absolutely delicious – crisp, tasting of toasted seeds with a touch of the sea, and fantastic with dips, cheese, or by themselves.

Coriander and coconut pesto

I can't believe that's healthy

Coriander and coconut pestoThis pesto is savoury yet slightly sweet at the same time. We ate it on some Beetroot and bean patties (recipe coming soon) and as a salad dressing. I think it would also work quite well smothered on chicken or fish for a simple weeknight dinner. It is very easy to prepare; just be careful not to burn the desiccated coconut while roasting it.

Coriander and coconut pesto

Makes about 1 cup

Ingredients

1 large bunch of coriander, washed and leaves pulled off the stems

½ cup pine nuts

½ cup desiccated coconut

2 cloves garlic, roasted

3 tablespoons reduced fat coconut cream

Salt

Utensils

Measuring cups and spoons

Small non-stick saucepan

Wooden spoon

Method

  • To roast the garlic, wrap the cloves in aluminium foil and roast in the oven for about 20 minutes at 180°C.

Societies social ‘norms’ are in complete conflict with nonviolence. This is a major concern for those who have attempted to heal the world through passive nonaggressive actions. Just in one day – I have rubbed shoulders with so many people who are unwilling to listen, learn or educate themselves, even though comprehensive material was given to them at no cost whatsoever. The absolute refusal, to have an open mind about a topic pivotal to the progress of the future of nature herself, shows a society indoctrinated with stubborn will to make no attempt to understand what it means to make life liveable for sentients. The matter of ‘inconvenience’ is always the answer – but at who’s expense and at what cost does that ‘inconvenience’ to change come?  Is often a question that they are unable and refuse to relate to.
